7 things...

A handful of baking hacks.
A kitchen soundtrack.
A perspective on being fully yourself.
A cookie that has become “the favorite.”
A page worth reading.
A project ready to launch.
A list of reminders to myself.

A handful of baking hacks

After many trial and errors, proof that allowing myself to be a beginner and not be scared of imperfections or not being good at something in the kitchen is mayyyybe paying off. You learn things as you go...Few things I have learned...

Use good creamy butter - like high fat for the fluffy factor. I have been using what I can find locally around me which is Kerrygold or Cabot Premium Extra Creamy.

Also if you want to soften butter, place hot water in a thermal cup to get it hot and covery your stick of butter over it to soften it. I pretty much do this every time because we do not have a microwave and I forget to take our the butter ahead of time!

Use a round cup to shape the cookies as they come out of the oven. If you want a nice round cookie - give it a spin.

Add extra chips or salt flakes on top of hot cookie when they come out of oven - for extra YUM. My fave for salt flakes.

Let cookie dough chill in the fridge for at least 30 minutes before scooping out to bake. This has proven to make it easier to scoop and also gives the cookie more lift.

A kitchen soundtrack

Music in the kitchen feels very necessary. It’s the hub of our home, open and connected to our living space, so whatever is playing kind of sets the tone for all of us. I am particular about it, both the type of music and the volume. Too loud or too heavy and it throws me off.

I like it to feel light, easy, almost in the background...but still there. Something that lets me focus on chopping, stirring and prepping without taking over.

Lately I’ve been playing the La La Land Soundtrack. It has this flowy, dreamy feel that just works. And because I loved the movie, it carries that extra layer of good feelings with it.

If you have any other recommendations, please share!

A perspective on being fully yourself

“What the really great artists do is they’re entirely themselves. They’re entirely themselves, they’ve got their own vision, they have their own way of fracturing reality, and if it’s authentic and true, you will feel it in your nerve endings.

David Foster Wallace
